Ripe banana curry

Jain's celebrate 8 days of festival call Paryusan where eating any leafy vegetables, vegetables grown under earth are not consumed. Many ask, what can you eat during those days or when you continue your Jain diet for all your life? There are many substitutes available from making curry out fruits to various kinds of pulses. One such all time popular and favorite is ripe banana curry.

Ingredients:
4 to 5 Ripe bananas
2 tsp Chili powder
1/2 tsp Turmeric powder
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds
1 tbsp Oil
Salt to taste
2 cups Water
Method:
Cut bananas into small circular pieces of about 1/2 inch thickness
Heat oil in a wok, add mustard seeds. Once splutter add cumin seeds
Once cumin seeds splutter add bananas, chilly and turmeric powder, salt, water and mix well
Let it cook for couple of minutes. Serve hot with phulkas or can also be used as bread spread
