Mix vegetable paratha

Ingredients:
For stuffing
1 cup Mix vegetables (grated carrots, finely chopped french beans, green peas)
2 medium Potatoes
1 medium Onion
1 finely chopped Green chili
1 inch Ginger
2 to 3 cloves Garlic
1 1/5 tbsp Oil
Handful Fresh coriander
2 tsp Lemon juice
1 tsp Sugar (adjust as per taste)
2 pinch Garam masala
Salt to taste
For dough
4 cups Wheat flour
2 tbsp Oil
2 cups Water
Salt to taste
To make paratha
3 to 4tbsp Ghee
2 cups Wheat flour
Method:
Stuffing:
Cut potatoes in half and boil them; chop onion
Add oil in the pan, once heated, add green chilies, chopped ginger garlic and chopped onions. Saute for a minute.
Add mix vegetables, salt, turmeric, mix well and saute for 2 to 3 minutes
Now add mashed boiled potatoes (skinned), sugar, lemon juice, garam masala, coriander and mix well. Keep it aside to cool down.
Dough:
Take flour in deep bowl. Make a hole in between and add oil, salt and mix it well
Slowly keep adding water and mixing the flour till it becomes one big ball; it should not be too soft or too hard
Cover and keep aside for 10min
Making paratha:
Add few drops of ghee on the dough and knead until smooth
Divide dough into 5 to 6 pieces (tennis ball size)
Roll two dough balls in dry flour and flatten both of them with fingers or rolling pin
Add 2 tbsp of stuffing between two flattened dough and close the edges and secure them properly
Roll it lightly, without making it too thin
Heat flat pan/ tawa on medium flame
Place paratha on the pan and flip after 2minutes
Now apply ghee on the paratha and flip it again and apply ghee on the other side too
Cook on each side for couple of minutesĀ by pressing lightly on the edges with the laddle untill golden brown
Serve hot with tomato sauce or curd or chutney
