Broccoli Soup

1 medium size Broccoli

3 cloves (or ½ tsp paste) Garlic

1 tbsp Olive oil

3 tbsp Butter

1 tbsp Fresh cream

2 medium size Onions (chopped)

1 medium Carrot

1/2 tsp Black pepper powder

Salt to taste

1/2 tsp Red chili flakes

1 tsp Oregano

1 to 2 cups Water/ Broth (if available)


  • Heat Olive Oil  and 2 tbsp of butter on medium flame in the pan and add chopped garlic/garlic paste, chopped onions, Chilli flakes, Oregano, chopped carrot and Broccoli florets. Close and let it cook for about 5 to 10 min till just cooked. Make sure it does not  get over cooked as it may loose flavor.

  • Once just cooked put off the flame and let it cool for a while. Once cooled grind it in the mixer with Fresh cream and pour it back in the pan and heat it on medium heat.

  • Add salt, pepper and water/broth (depending on how much thick you want the soup to be). Once starts boiling put of the gas

  • Before serving add remaining butter.
